Little Sisters preparing West African Inspired Red Rice + Beans

ingredients

  • ½ cup palm oil 

  • ½ cup oil of choice

  • 2-3 garlic cloves, minced

  • 1 medium onion, diced

  • 1 tbs smoked paprika

  • 1 tbs thyme

  • ½ hot pepper of choice 
    or ½ tsp of cayenne

  • 4 tomatoes, diced

  • 2 cups rice, washed

  • 2 cups red beans

  • 4 ½ - 5 cups of vegetable broth
    or water

  • 1 tbs salt, and more to taste

  • Optional: shrimp or fish 

Recipe

Heat oil in a pot on medium heat. Add onions, garlic, thyme, paprika + hot pepper. Sauté until onions are translucent then add tomatoes. Cook 5 -7 minutes, until fragrant.

Stir in the rice. Continue stirring for 2 minutes.

Add beans, broth + bring to a boil. Reduce heat + simmer until rice is cooked, 18 mins or a bit more.

Turn off stove + drape a dish towel over pot for 10 minutes to absorb excess moisture in the rice.

Serve. Give thanks + break bread with your loved ones.
